Founded in 1550, Konishi Shuzo is the oldest single-family-owned sake brewery in Japan. Akiko Konishi, the 16th generation owner will join us at The Periodic Table for an exclusive sake tasting of 9-year-aged Edo Genroku.
Konishi’s recipe for Edo Genroku dates to 1688-1704, and is very different from modern brewing methods. The rice was milled only by around 10%, and the amount of water used during fermentation was only half of modern standards. Following this old recipe, Konishi created a revival version of this 17th century sake. It has a deep color, with a rich and sweet taste. It is totally different from sake found in stores today.
9-year-aged Edo Genroku is a limited version of this unique sake. By aging for nine years, the taste becomes even richer and less acidic.
